Easy weeknight meal: Summer Stir Fry

Last night, I came across the cooking site “The Comfort of Cooking” (via TheNest.com) which has some really tasty-looking recipes accompanied by some amazing imagery (I really need to upgrade to a better camera-DSLR, maybe?). Coming home from the gym, I always feel like I’m starving. So, I looked for something easy to throw together for dinner and the ‘Summer Stir Fry’ popped up. Who doesn’t love a good stir fry, especially one with fresh, healthy ingredients?

Luckily, I already had all of the ingredients on-hand (happy dance!) :

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 25-30 whole shrimp, peeled, deveined, tails left on
  • 2 whole zucchini, sliced on a slight diagonal
  • 2 ears corn, kernels sliced off
  • ½ cup grape tomatoes, halved
  • Salt and freshly ground pepper, to taste
  • Chopped fresh herbs, such as parsley/basil/cilantro, if desired
  • **Crushed red pepper flakes (Not a part of the recipe, but I added since I love spicy food)
  • **Jasmine rice or Brown rice (This wasn’t included in the recipe either, but I added for a little more substance)

I am happy to report the dish was very easy to prepare, it’s super colorful and full of flavor. This recipe yielded more than enough to bring for today’s lunch. This will definitely be added to my list of quick and easy meals — very pleasing to the taste buds.

B.E.T. Awards 2013 – Best Dressed

Last Sunday, the B.E.T. Awards aired and the red carpet was buzzing with some very interesting fashion choices. There were definitely some people who didn’t look like they put much effort into their looks. Then, we have the ladies who really represented, looking sassy and most definitely classy.

My favorites:

Adrienne Bailon – Rocked a berry colored Michael Costello gown, looking very grecian and goddess-like. I also love how she accessorized with turquoise accents

Jordin Sparks – Wore a Clover Canyon, printed sheath which is perfection for a summer look. Let’s not overlook the understated, but oh-so-necessary hoop earrings (my all-time favorite accessory)

Nicki Minaj – Dazzled in form-fitting, black lace detailed Roberto Cavalli. The look is a little vampy, but so feminine and alluring

Michelle Williams – Exhibited lady-like chic with a strapless layered-ruffle peplum gown, designed by Nicci Hou. The deep “V” and the high split in the front offers a touch of ooh-la-la

Volunteering at the Youth Empow”her”ment Summit 2012

One of my good friends who is heavily involved in our local community, asked me to assist her at the Youth Empow”her”ment Summit this year.  We spoke about building positive images via social media and personal branding. The day’s program was filled with seminars, guest speakers and even a choreographed dance class. The girls were so sweet and receptive–we all had a blast! The whole day was about encouragement and everyone who attended, including myself felt every bit of it. Participating in events such as this, really allows me to give selflessly and the feeling is great.

Wedding planning, Sangria & Caprese!

First things first, the wedding planning was not for me (insert smirk here), but it was for one of my very good friends. It was a blistering hot Saturday afternoon outside, but inside my cozy domain, it made for a very chill day. The bride-to-be, and a fabulous mutual friend of ours, my wonderful Mother and myself, recently gathered around my dining room table to hash out some important wedding details. I threw together an assortment of light snacks — fruit, salami, select cheeses and pita crisps along with chocolate-covered pretzels for something sweet. We also had salsa and guacamole with tortilla chips and…fresh caprese salad (deliciously prepared by the fiance of the bride-to-be). The cocktail du jour was a homemade red sangria, which turns out to be one of the most easily prepared, crowd-pleasing beverages. (In addition to my homemade version, there are also many bottled sangria versions sold in stores, which we also tried!)

Many magazines were strewn about, items from the to-do list were crossed off and more importantly, many laughs took place. Truth be told, wedding planning appears to be a bit daunting, no matter the size of the guest list.  However, with a few good friends, great food, a little music and a refreshing summer beverage, it was actually a stress-free, hilarious afternoon.

104 degrees??!

I’m not sure of what part of the world you live in, but here in the South, it’s officially summer and…104 degrees!!

Saying it’ s a scorcher outside, is an understatement. Staying in the house may get a little boring and cabin fever will most likely set in, so partaking in some pool, lake or beach time is ideal. I sure will be hitting the pool– although my little neighborhood pool looks nothing like the inspiration picture above. How peaceful and serene does that look?

Look-for-Less: Multi-print wedges

I’ve shared my love for wedges in a past blog post and guess what I’ve found? A great “wedge” look-for-less!

Quickly breezing through Dillard’s last Friday, I came across these FABULOUS Steve Madden “Pammyy” wedges that can literally coordinate with any solid color under the spectrum. These definitely aren’t for practical purposes, but aren’t they fun? They were on sale for $69.99 and I was totally contemplating the purchase, but left them in the store to think on it.

On Sunday, I made my way over to my local Super Target and perused the shoe section (as I normally would) and look what I found?! The same exact shoe, but for a fraction of the price at only $29.99! With all this excitement for the discounted price, I anxiously looked for my size (10 – don’t laugh) and…NOTHING. They didn’t have them in my size! Since Target was closing, I didn’t get a chance to run over to another location, but my search continues! Not to mention, who can pass up a great deal like this?!
